Sec. 3.21. Storage of cleaned containers and equipment—Item 13p

- (a) All multiuse containers, equipment and utensils, after cleaning, shall be drained dry and protected from contamination.(b) All cans and other multiuse containers and equipment shall be transported and stored in clean crates or on racks in a clean place and shall be protected from splash, flies and dust. (For protection against overhead leakage and condensation, see section 3.23 of this Part [Item 15p].) Such containers as can practicably be inverted shall be stored in an inverted position. Storage racks shall be constructed of metal which is protected against rusting.
